Here is a delicious cranberry walnut bread made with orange juice. This is a Christmas tradition on our family started by my mother-in-law. She makes it every Christmas eve for us on Christmas morning.
Yield: Serves 6
Cranberry Orange Walnut Bread
Ingredients:
- 1 egg
- 1/4 cup vegetable or olive oil
- 1 cup sugar
- 3/4 cup orange juice
- 2 cups flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 1 tablespoon orange zest
- 1/2 cup walnuts
- 1 1/2 cups coarsely chopped cranberries.
Directions:
1. Preheat oven to 350 degrees. In a large bowl, combine egg, oil, sugar and orange juice. Whisk well. Sift together flour, baking soda, baking powder and salt. Add to bowl and whisk until just combined. Add orange zest , cranberries and walnuts. Fold in ingredients.
2. Bake at 350 degrees for 1 hour, or until golden brown. Bread is done when toothpick is inserted in the middle of the loaf and it comes out clean. Let cool and wrap in saran wrap overnight before serving.
