Chocolate cobbler is one of the easiest to make and most decadent chocolate desserts. It is a super moist chocolate cake like brownie floating on top of rich hot chocolate sauce. It is the perfect dessert with homemade vanilla ice cream. And did I mention it was low fat! It only has 2 tablespoons of oil in the whole dessert. I have had this dessert as a child at church functions, but had forgotten about it till recently. I just reminded of this recipe again by a friend. I soon remembered that wonderful treat from my childhood that I had had just a few times, but had never made. When I started researching recipes, I realized what a low fat wonderful dessert this is. Here is a simple recipe of how to make chocolate cobbler.
Yield: SERVES 4
Chocolate Cobbler
Ingredients:
- 1 cup all purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon kosher salt
- 3 tablespoons cocoa powder
- 1 cup milk
- 2 tablespoons olive or vegetable oil
- 3/4 cup sugar
- 1 teaspoon vanilla
- 1 cup roasted nuts (optional)
Topping:
- 1/4 cup cocoa powder
- 3/4 cup brown sugar
- 1 3/4 cup hot water
Directions:
- Preheat oven to 350 degrees.
- Sift together flour, baking powder, cocoa, and salt in a large mixing bowl. Add sugar and mix. Add vegetable oil, milk, and vanilla. Mix until well incorporated, but do not over-mix. Add roasted nuts if using.
- Spray 8x8 baking pan with non-stick spray. Pour mixture into baking pan.
- Add topping ingredients, just sugar and cocoa to a mixing bowl, and mix well. Sprinkle on top of batter.
- Then take the hot water, from tap, and very, very slowly pour on top of everything, making sure that all topping sugar is wet.
- Bake in a 350 degree oven for 45 minutes.
