Here is a fun and easy way to decorate your apple muffins, or any breakfast muffin for your kids. I mad these cute bear muffins with just a little royal icing, chocolate chips, and almond slices.
Yield: Serves 4
Apple Bear Muffins
Ingredients:
- 2 eggs
- 3/4 cup sugar
- 1/2 cup butter, melted
- 1/2 cup milk
- 1/2 cup apple cider
- 2 cups flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 cup shredded sweet apples
- Non-stick spray
Decorations
- Miniature chocolate chips
- Chocolate Chips
- Sliced Almonds or apple chips
- royal icing (recipe follows)
For the Royal icing
- 1 egg white
- 1/2 teaspoon lemon juice
- 1/4 teaspoon vanilla extract
- 1 1/2 cups powdered sugar
Directions:
1. Preheat oven to 375 degrees. Add sugar, eggs, milk, apple cider and melted butter to a large bowl. Mix well. Sift flour, baking soda, baking powder and salt together. Add to bowl and mix until just combined. Fold in shredded apples.
2. Spray muffin cups with non-stick spray, even if using paper liners. Pour batter into muffin cups and bake at 375 degrees for 15- 20 minutes or until golden brown.
3. Decorate with a very small amount of royal icing to make the nose. Then add chocolate chips and almonds.
For the Royal Icing
1. Mix egg white, lemon juice and vanilla extract until frothy. Add sugar and mix well. If it’s a touch too thick, add water. If it’s too thin, add more powdered sugar.
