When I came across this recipe on Deborah’s blog, Taste and Tell, I immediately got a craving for them. First of all, I love anything coconut. Add rice crispies to the mix and you’ve got a serious craving. I could just imagine what the crispy cereal was going to do to the texture of the cookie. Well, I got my craving fix... and now I want to share it with all of you!
Crispy Coconut-Oatmeal Cookies
Ingredients:
- 1 cup butter
- 1 cup sugar
- 1 cup firmly packed brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 2 cups regular oats (uncooked)
- 2 cups crisp rice cereal
- 1 cup flaked coconut
Instructions:
- Preheat oven to 350F.
- Beat the butter, sugar and brown sugar at medium speed in an electric blender until blended. Add eggs and vanilla; beat well.
- Combine flour, baking soda, baking powder and salt. Add to the creamed mixture, mixing well. Stir in oats, cereal and coconut.
- Shape dough into 1-inch balls and place 2 inches apart on a lightly greased cookie sheet. Flatten slightly with a fork or the bottom of a glass. Bake for 12 minutes or until done.
- Transfer to wire racks to cool.
