A simple flavorful shaved fennel and arugula salad perfect for summer! Also, a fantastic salad tool kit giveaway provided by OXO.
Shaved Fennel and Arugula Salad
Yield: 4 servings
Ingredients:
- 1/2 bulb fennel, washed and trimmed of stems and leaves
- 1/2 5 oz bag of arugula, washed and dried well
- 1/2 small head of radicchio, sliced thin
- Parmesan shavings
- 1 -2 lemons, halved
- 1-2 tablespoons olive oil
- pinch coarse salt and fresh ground pepper
Directions:
- Using your handheld mandoline (or sharp knife), carefully slice your fennel very thin. Place in large bowl along with arugula and radicchio. Gently toss to combine.
- Using a vegetable peeler, take a block of Parmesan cheese and carefully cut shavings off block and into salad. Use as much or as little cheese as you would like.
- Squeeze fresh lemon juice over salad, followed by a drizzle of olive oil. Season to taste with salt and pepper and gently toss using tongs. Transfer to your serving plate, or serve straight out of your mixing bowl.
