I received some beautiful endive last weekend and just had to make a salad with it. It’s a beautiful w inter salad. I served this salad along with chicken strips (my son’s favorite).
Yield: Serves 4
Apple Endive Salad with Poppy seed Dressing
Ingredients:
For the salad:
- 6 small heads of endive, chopped (I used green and red)
- 1 sweet apple, chopped
- 1 medium cucumber, chopped
- 6 radishes, sliced thin
- 1/2 red onion, chopped
For the Dressing:
- 2 tablespoons honey
- 2 tablespoons apple cider vinegar
- 41/4 cup olive oil
- 1/2 teaspoon dry mustard powder
- 1 teaspoon poppy seeds
- 1 clove garlic, grated
Directions:
- Combine all ingredients for the salad in a large bowl.
- Combine all the ingredients for the dressing in another bowl and mix well. Pour over the salad and toss well.
