This is my favorite summer salad. It’s quick, easy, and uses fresh summer produce. It’s perfect for any barbecue or summer get-together, is healthy, and won’t spoil easily like many mayonnaise based salads.
Yield: Serves 4
Marinated Cucumber Salad
Ingredients:
- 2 large cucumbers, sliced thin
- 1 large tomato, sliced thin
- 1 red onion, sliced thin
- 3 cups white vinegar ( or for a less acidic salad – 1 1/2 cups white vinegar and 1 1/2 cups water)
- 3 tablespoons sugar
- 2 teaspoons salt
- lots of fresh cracked pepper
- feta cheese to garnish
Directions:
1. Thinly slice all vegetables and add all other ingredients except cheese in a large bowl. Cover and refrigerate over night
2. Serve garnished with feta cheese.
