These scones super flavorful and not too sweet. They will fill your whole home with a beautiful orange scent. They make a great breakfast item or a delicious afternoon snack.
I just started making scones, and was extremely surprised at how quick and easy they are to make. If you can make a biscuit, you can definitely make these. Scones might even be easier because there’s no biscuit cutter needed. Just cut your scone dough like a pizza, and then place dough slices on a baking sheet.
Yield: Serves 4
Cranberry Orange Scones
Ingredients:
- 2 cups self-rising flour
- 1/4 cup sugar
- 1/4 cup very cold butter, cut in pats
- 1 tablespoon orange zest
- 1 large egg
- 1/2 cup milk or cream
- 1 teaspoon vanilla extract
- 1 cup dried cranberries
Directions:
- Preheat oven to 450°. Combine flour and sugar in a large mixing bowl. Mix well. Add orange zest and butter. Using a pastry knife, incorporate the butter in the flour until it is grainy.
- Add egg, milk, vanilla extract and cranberries. Mix until just combined. Use hands to finish incorporating flour into the dough.
- Form a disc with the dough on a lightly floured surface and cut into diamond shapes.
- Transfer scones to a parchment or nonstick surface on a baking sheet.
- Bake at 450 degrees for 12 - 15 minutes, or until golden brown.
