Peach Salsa Recipe

Here is a quick and easy peach salsa recipe flavored with mint and ginger, perfect for your grilled meats. I saw a peach salsa on Simply Recipes a few days ago, and couldn’t wait to give it a try. This one’s a little different, I adjusted it to our taste. It’s a great way to get some fruit in your meal that is savory. I have noticed that my son has the same tendencies as me, he’s not too big on sweet things unless their wrapped in carbs (fruit baked goods) or it’s chocolate (preferably dark). So eating our weight in fresh sweet fruit, like my husband does, is not exactly our idea of a good time. But, if you add a savory flair to sweet fresh fruits, we’re all over it. Think salt and watermelon, yum!

Peach Salsa

Ingredients:

  • 2 - 3 ripe, yet firm peaches, diced (you can leave the skin on or off)
  • 1/4 red onion, chopped
  • 3 tablespoons mint leaves
  • 1 teaspoon fresh ginger, grated
  • a pinch of kosher salt
  • the juice of 1/2 a lemon
  • 1 jalapeno, diced and seeded (optional)

Directions:

  1. Combine all ingredients in a large bowl and refrigerate until ready to serve.
  2. Salsa is best when it is left to refrigerate a few hours before serving.
