We love tostadas so much at our house. This is my latest and greatest creation, pork with cucumber lime salsa.
Yield: Serves 4
Pork Tostadas with Cucumber Lime Salsa
Ingredients:
For the pork
- 1 lb pork, sliced (I used Pork Loin Sirloin Cutlets)
- 1/4 teaspoon onion powder
- 1/4 teaspoon garlic powder
- 1/2 teaspoon cumin
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried cilantro
- salt and pepper
- olive oil
For the salsa
- 1 cucumber, diced
- 3 diced tomatoes
- 1 small bunch fresh cilantro, roughly chopped
- the juice of 1 lime
- salt and pepper
For the beans
- 1 – 15 oz can re-fried beans
- 1/4 teaspoon onion powder
- 1/4 teaspoon garlic powder
- 1/2 teaspoon cumin
- Shredded cheddar cheese
- Guacamole and/or sour cream (optional)
- Tostada shells
Directions:
1. Combine sliced pork and spices. Preheat a large skillet. Drizzle with olive oil. Add pork and brown on all sides.
2. Combine all ingredients for salsa and stir to combine, set aside.
3. Combine beans and spices and heat in microwave or small saucepan.
4. Spread tostada shell with re-fried beans, sprinkle with cheese, top with pork and then cucumber salsa.
