It seems the older I get, the more and more sensitive to lactose I get. I’ve always been one of those that couldn’t drink milk, but could eat a small amount of cheese, and some ice cream without too many problems. That’s why I am always on the lookout for lactose free products that can make my life a little easier. I was really excited when I found out about Yoplait’s® new lactose free yogurt line. They are tasty single serve yogurts in delicious flavors, and all lactose free.
These tasty little yogurts don’t just make tasty snacks, you can also incorporate them into many types of recipes. Here I have taken a sweet peach yogurt and combined it with spicy curry to make an irresistible light and lactose free chicken salad. I also added crunchy celery and healthy almonds to this chicken salad. You can serve this salad over greens, or have it in a wrap as shown or a pita. Just make sure to use lactose free tortillas or pitas to make your recipe completely lactose free.
Yield: Serves 4
Curried Peach Chicken Salad
Ingredients:
- 1 lb cooked and shredded lean chicken breast
- 1 6 oz container Yoplait® Lactose Free Peach yogurt
- ½ cup chopped spring onions
- ½ cup chopped celery
- ½ cup sliced almonds
- 1 teaspoon lemon juice
- ½ teaspoon curry powder
Directions:
- Combine cooked chicken, Yoplait® Lactose Free Peach yogurt, chopped spring onions, chopped celery, almonds, lemon juice and curry powder in a large bowl. Mix well to combine.
- Serve with fresh greens.
Tips:
To make your own cooked chicken for this recipe, place 1 lb boneless, skinless chicken breasts in a saucepan. Cover with chicken stock. Bring to a boil and reduce to medium heat. Cook for 15 - 20 minutes, or until chicken is no longer pink in the center. Use two forks to shred the chicken breasts for this chicken salad.
For more spice, add an additional ½ teaspoon of curry powder to the chicken salad.
