Pad Thai Recipe

As requested, the Pad Thai recipe!

I've been trying to make a good pad Thai for over a year now. I found surprisingly few recipes on the web. Most of them were okay, but not great, and some truly missed the mark. I made a number of these, adjusting them to tastes, and I think that I finally have a product with which I am satisfied. The great thing about Thai cooking is that it is adjustable to tastes quite easily. Like it a little more tart? Add more tamarind. Like it to taste a little brighter? Squeeze of lime.

You can add any protein that you like, or leave it out. I recommend crispy tofu, but shrimp is nice, and so is chicken. Also, feel free to change the vegetables to your liking.

This recipe works more as a blueprint than anything, much like all of my recipes.

Ingredients:

  • 1 pkg (13 ounces) wide rice noodles
  • 1 cup bean sprouts
  • 2 carrots, thinly cut into strips
  • 2 eggs, whisked for scrambling
  • 1 package tofu, firm or extra firm
  • 2 cloves garlic, finely chopped
  • 2 tbsp oil, divided
  • 1/2 cup cornstarch
  • 1/4 cup fish sauce
  • 1/4 cup tamarind concentrate
  • 1/3 cup brown sugar or coconut sugar
  • 2 tbsp lime juice (about 1 lime)
  • 1 tsp smooth peanut butter
  • pinch of red pepper flakes
  • Chopped peanuts and lime slices, for serving

Directions:

  1. Press the block of tofu with paper towels and squeeze as much of the liquid out as possible. Chop the tofu into 1-inch squares. Heat 1 tbsp of oil in a pan. While the oil is heating, coat the tofu with the cornstarch. Once the oil is hot, fry the tofu until each piece is nice and crispy, about 10 minutes.
  2. While the tofu is cooking, start the water boiling for the noodles. Start another pan with the rest of the oil. Once the oil is hot, toss in the carrots, bean sprouts, and garlic.
  3. Mix the fish sauce, tamarind, sugar, lime juice, peanut butter, and pepper flakes.
  4. Cook the noodles per package instructions, drain, and pour cold water on them to stop them from overcooking. While the noodles are cooking, scoot the sauteed vegetables over in the pan, and scramble the eggs.
  5. In the now-emtpy noodle pot, mix all ingredients together. Serve topped with peanuts, and with slices of lime on the side. If you like it spicier, add more red pepper flakes.
  6. Enjoy your new superpower to make Pad Thai!
