Yesterday, I was in the mood for my favorite bar food flavor, buffalo chicken anything. I love buffalo chicken salads, sandwiches, and of course wings. There is one restaurant that my husband and I go to, and he only orders the buffalo chicken sandwich. So I thought it was about time that I start making it at home. It was so much better, tastier, and cheaper. You can use butter and hot sauce, or buy the prepared wing sauces. There are so many delicious prepared hot sauces, you can really get creative here. You can also make your own ranch or blue cheese dressings, or buy prepared ones. I prefer to have un-breaded chicken, but you cold easily batter and fry the chicken breasts. This is a great recipe you can easily take some short cuts from the grocery store by buying prepared items, or make everything homemade.
Yield: SERVES 4
Buffalo Chicken Sandwich
Ingredients:
- 4 boneless skinless chicken breasts
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon paprika
- kosher salt
- pepper
- olive oil
- 1/4 cup tabasco sauce plus 3 tablespoons butter, or 1/2 cup wing sauce
- 1/4 cup water
- blue cheese or ranch dressing
- lettuce
- tomato
- onions
- buns
For the Blue cheese dressing:
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 1/2 cup crumbled blue cheese
- 1 clove grated garlic
- 1/4 teaspoon white pepper
- a pinch of kosher salt
For the Ranch Dressing:
- 1/2 cup buttermilk
- 1/4 cup mayonnaise
- 1 clove garlic, grated
- 2 tablespoons grated fresh onion, from the root end
- 1/2 teaspoon lemon juice
- 1 teaspoon fresh chopped chives
- 1 teaspoon freshly chopped parsley
- kosher salt
- pepper
Directions:
- Prepare vegetables for sandwich. Preheat skillet. Pound the chicken breasts out to 1/2-1 inch thickness with a cast iron skillet. Salt and pepper chicken. Sprinkle each breasts with a little paprika and cayenne pepper. Drizzle pan with olive oil. Brown chicken on each side and remove from skillet.
- De-glaze pan with water. Add tabasco and butter, or wing sauce. Add chicken back to pan and simmer for about 5-10 minutes, until sauce has thickened.
- To prepare dressings, combine all ingredients in a bowl and mix well.
- Serve in warm buns topped with blue cheese or ranch.
