This Chickpea and Feta Salad is a great healthy snack or appetizer for any meal or function. The original recipe comes from Duchess of Fork.
Chickpea and Feta Salad
Yield: Makes 2 cups
Ingredients:
- 1 (16 oz) can of chickpeas (garbanzo beans)
- 1 green onion, sliced thin
- 1 cup diced cucumber
- ½ cup diced bell pepper
- ½ cup crumbled feta
- 2 tbsp. olive oil
- 2 tbsp. red wine vinegar
- ½ tsp. dried oregano
- ½ tsp. fresh cracked black pepper
- 1 tsp. garlic salt
Directions:
- In a large bowl, combine chickpeas, onions, cucumbers, bell peppers and feta.
- In a small bowl, whisk together olive oil, vinegar, oregano, pepper and salt. Pour over chickpea mixture and toss to combine.
- Cover and chill until ready to serve.
