For this pizza, I just took the flavors of a fajita, and made them into pizza form. I used salsa as the pizza sauce, then added grilled chicken, bell peppers and onions with shredded Mexican cheeses. After baking, I garnished my pizza with some freshly chopped cilantro.
When I make homemade pizza crust, I like to brush the crust after it’s baked with butter and sometimes sprinkle it with garlic or Parmesan. It adds so much to the pizza. To make the crust of this pizza really stand out, I used a spicy chipotle lime butter made with just three ingredients – butter, chipotle powder and lime juice.
Yield: Serves 8
Chicken Fajita Pizza
Ingredients:
- 1 (11 oz) package Pillsbury thin crust pizza dough
- 1/2 cup mild salsa
- 2 cups sliced grilled chicken
- 1 1/2 cups red,green and yellow sliced bell peppers
- 1/4 cup sliced red onion
- 2 cups Mexican blend shredded cheese
- 2 tablespoons freshly chopped cilantro, for garnish
For the chipotle lime butter:
- 2 tablespoons butter
- 1/4 teaspoon chipotle chili powder
- 1 teaspoon lime juice
Directions:
- Heat oven to 400°. Stretch dough to the size of a jelly roll pan. Spread salsa over dough. Sprinkle 1 cup of the shredded cheese over salsa. Top with grilled chicken, bell peppers and onion. Add the rest of the cheese over pizza. Bake at 400° for 10 - 15 minutes, or until cheese has melted and pizza is starting to brown around the edges.
- Garnish the pizza with fresh cilantro and crust with chipotle lime butter.
