Sante Fe Salad with Sour Cream Chipotle Dressing

This is a wonderful salad topped with spicy chicken and spicy sour cream chipotle dressing. It also has black beans, silver queen corn, fresh tomatoes, red onions, and fresh cilantro. I was overjoyed when I found a large bag of frozen silver queen corn at my local Publix supermarket. The silver queen corn was a wonderful addition to this salad. Down here in Florida we really can’t tell what season it is, so I just keep going back and forth with summer and fall dishes. It is still so hot and humid, although we can detect the slightest breeze in the evening. That makes us realize the end of hurricane season is drawing near, and the hot, humid rainy days will be traded for beautifully sunny days and mild temperatures. This salad has a little added warmth with the spicy sautéed chicken a spicy chipotle dressing.

Sante Fe Salad with Sour Cream Chipotle Dressing

Ingredients:

For the chicken:

  • 3-4 boneless skinless chicken breasts
  • 1/2 teaspoon cumin
  • 1/2 teaspoon coriander
  • 1/2 teaspoon dried cilantro
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon black pepper
  • a dash of cayenne powder (optional)
  • Kosher salt

For the salad:

  • Romaine lettuce (I used 3 hearts, or one large head)
  • 1 can black beans, rinsed and drained
  • 2 cups frozen silver queen corn, or other sweet corn, thawed
  • 2 tomatoes, diced
  • 2 tablespoons freshly chopped cilantro
  • 1/2 medium red onion, chopped

For the dressing:

  • 1 cup sour cream
  • 1-4 chipotle peppers, chopped, and a little of their adobo sauce
  • the juice of one lime
  • a pinch of kosher salt
  • Olive oil

Directions:

  1. Preheat skillet. Cut chicken in bite size pieces. Add seasonings. Drizzle pan with olive oil. Saute chicken until browned.
  2. Prepare dressing by adding all ingredients to a bowl and mixing well. You may want to add the peppers a little at a time to get the desired heat level. Set aside.
  3. Prepare salad by combining all ingredients in a large bowl, except for lettuce. Mix well.
  4. Prepare salad plates by adding shredded lettuce. Then top with bean and corn mixture. Follow by adding cooked chicken, and then finish with dressing.
