Here is a quick and easy recipe for sausage and peppers that’s a little more healthy. No bread, no pasta, just some added Cannellini beans.
Yield: Serves 4
Italian Sausage and Peppers with Beans Bowl
Ingredients:
- 5 links sweet Italian sausage, chopped
- 1 green bell pepper, sliced in strips
- 1 red bell pepper, sliced in strips
- 1 yellow bell pepper, sliced in strips
- 1 red onion, sliced in strips
- 1 lb green beans, ends trimmed
- 2 cloves garlic, chopped
- 1 – 15 oz can Cannellini beans
- 1 – 15 oz can diced Italian tomatoes
- 1 teaspoon dried Italian blend herbs
Directions:
1. Preheat large skillet. Drizzle with olive oil. Add sausage and brown. Add green beans, bell peppers, onions and garlic. Saute until green beans are tender crisp. Add cannellini beans and tomatoes and then cook for about 10 minutes more.
2. Serve with crusty bread.
