My son’s school is now in full swing, and he’s already come down with is first cold. It’s not too bad, just the sniffles. He didn’t have a fever so I sent him to school this morning, a little late. He didn’t feel like eating that much, and wasn’t even interested in his cherries, so I decided to make something special to excite him.
So I made these quick and easy breakfast tostadas. Aren’t they cute! These are just some scrambled eggs on top of a tostada topped with avocado, cilantro, tomato and queso fresco cheese. They take all of maybe 5 minutes to make and are just as nutritious as they are pretty.
I’ve made these tostadas pretty simple, but you can make them even more delicious by adding re-fried beans, spicy salsa and other fresh veggies. Just use your imagination, or simply clean our your fridge!
Yield: 1 TOSTADA
Breakfast Tostadas
Ingredients:
For each Tostada:
- 1 tostada
- 1 egg, scrambled
- 2 tablespoons queso fresco cheese
- sliced avocado
- 1 tablespoon fresh cilantro
- 2 tablespoons diced tomato
Directions:
- Scramble eggs to desired doneness and place on top of tostada. Top with queso fresco cheese, cilantro, dice tomato and sliced avocados.
- Serve and enjoy!
