Here is another delicious and easy quinoa salad recipe. This one has black beans, mangos, green and red peppers, red onions and cilantro. It’s a great salad for summer. I have really fallen in love with quinoa. I have tried other grains, but quinoa is my favorite. The next new one I wanted to try was farro, but that will require a special trip to Whole Foods.
Yield: Serves 4
Black Bean Mango Quinoa Salad
Ingredients:
- 2 cups quinoa
- 4 cups water
- 1 mango, diced
- 1 can black beans, rinsed and drained
- 1 red pepper, diced
- 1 green pepper, diced
- 1/2 red onion, diced
- 1 small bunch of cilantro, chopped fine
- the juice of 1 lime
- 1 teaspoon cumin
- 1 teaspoon kosher salt
- 1/4 cup olive oil
Directions:
- Cook quinoa according to package directions with water. Add all other ingredients to a large bowl.
- When quinoa is cooked, add to large bowl and stir to combine. Let set for about 15 minutes before serving so that the flavors can combine.
