Farmer’s Frittata Recipe

This is a fast and easy breakfast, brunch, lunch, or dinner. Frittatas are easy, cheap, and delicious. You can make them with any leftovers you have on hand. This one has country sausage, green peppers, onions, pepper jack cheese, and fresh tomatoes. I love to make these on the weekends, or as a quick weekday dinner. Frittatas are Italian open-faced omelets that you start on  the stove, and finish under the broiler. They puff when they are broiled, making them a wonderfully light. I like to make these better than omelets, because they are so much easier. You can cook one large one for the whole family, and do not have to take special orders for different omelets.

Yield: SERVES 4

Farmer's Frittata

Ingredients:

  • 6 eggs
  • 1/2 cup smoked country sausage (I like ground sausage for this recipe)
  • 1/4 cup bell pepper, chopped
  • 1/4 cup onions, chopped
  • 2 small sliced tomatoes
  • 1/4 cup pepper-jack cheese
  • Kosher salt
  • Pepper
  • Olive oil
  • Large 10 -12 inch oven safe skillet

Directions:

  1. Preheat oven broiler. Preheat skillet. Drizzle skillet with olive oil. Brown Sausage.
  2. Add bell pepper and onion and saute until tender. Then spread sausage and vegetables in an even layer on the bottom of the skillet. Scramble the eggs and add kosher salt and pepper to taste.
  3. Then pour the scrambled eggs over the vegetables and sausage. Cook over medium heat until eggs are set up on the sides of the skillet. Sprinkle with cheese and place tomatoes on top of frittata.
  4. Bake under the broiler until eggs are set and frittata is lightly browned and fluffy.
