Here is a simple recipe for chocolate pudding you can make in a flash. My son and my husband were asking me for chocolate last night. Only having some cocoa powder, I started brainstorming on what I could make quickly. I decided to try a pudding and researched a few pudding recipes. I found that most of them, while very good, are pretty complicated. I found the inspiration for this easy recipe from the Hershey website. This was my first making homemade pudding. I couldn’t believe how easy it was. You’ll never go back to those little boxes again after making your own pudding. Its quick, easy, and economical. The only ingredients I changed were to use dark chocolate cocoa instead of regular cocoa and to use an egg yolk instead of butter. I quickly chilled the pudding by putting it in a stainless steel bowl nested inside another stainless steel bowl that was filled about halfway with ice water. This chilled the pudding pretty fast and we ate it at room temperature. I garnished it with some fresh mint that we’re growing in container pots in our courtyard.
Yield: Serves 4
Easy Dark Chocolate Pudding
Ingredients:
- 2/3 cup sugar
- 1/4 cup HERSHEY'S DARK Cocoa
- 3 tablespoons cornstarch
- 1/4 teaspoon salt
- 2-1/4 cups milk
- 1 egg yolk
- 1 teaspoon vanilla extract
Directions:
- Combine sugar, coca, cornstarch and salt in a medium sauce pan. Whisk in milk. Add egg yolk. Turn heat to medium and let the mixture come to a boil while whisking very often. Let boil for one minute then remove from heat.
- Add vanilla extract and whisk to combine. Refrigerate for 2 hours until chilled.
