We are crazy about nachos in my family, but we all have a hang-up about soggy nachos. Since we never seem to eat them before they get all soggy, I just put all the yummy nacho toppings in a layered dip. This is perfect for game day or a movie night. For the first time, I am going to try a photo step by step so you can see the recipe play out in photos here. I had been thinking about doing these for a while, and at the request of a reader, here’s my first attempt. Let me know what you think, and if you’d like to see more recipes like this in photos.
So step 1, add beans
then add the browned ground beef layer,
then add some yummy cheese sauce,
and then on to the lettuce,
some tomato,
some onion,
and don’t forget the fresh cilantro,
and some olives, excuse me while I eat the rest of the can
and a whole lotta guacamole!
guacamolefinish with some sour cream, and your all set for game night!
Yield: Serves 8
Loaded Nacho Dip
Ingredients:
Beans
- 1 can re-fried beans
- 1 teaspoon cumin
- 1/4 teaspoon onion powder
- 1/4 teaspoon garlic powder
- 1/2 teaspoon chili powder
Beef
- 1 lb ground beef
- 1/2 medium onion, chopped
- 1 clove garlic, chopped
- 1 teaspoon cumin
- 1 teaspoon dried oregano
- 1 teaspoon dried cilantro
- salt and pepper to taste
- olive oil
Cheese Sauce
- 2 tablespoons butter
- 2 tablespoons flour
- 2 cups milk
- 2 cups cheddar cheese, finely shredded
- 1/2 teaspoon salt
- 1/2 teaspoon paprika
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
Next Layers
- 2 cups shredded lettuce
- 1 cup chopped tomato
- 1/2 cup chopped red onion
- 1/4 cup chopped fresh cilantro
- 1/2 cup sliced black olives
Guacamole
- 4 avocados
- the juice of 1 lime
- 1 clove finely chopped garlic
- 2 tablespoons freshly chopped cilantro
Last Layer
- 1/2 cup fresh sour cream
Directions:
1. Combine first five ingredients in a bowl and mix well. Then spread the beans in a casserole dish.
2. Preheat a large skillet. Drizzle with olive oil and add ground beef, onions and garlic from the next list of 8 ingredients. Add cumin, oregano, cilantro, salt and pepper. Brown beef and add it as the next layer of the dip.
3. In a clean skillet, melt butter. Add flour and whisk to make a roux. Add salt, garlic powder, onion powder and paprika. Cook for 2 – 3 minutes over medium heat until it smells nutty. Add milk and turn heat to high, stirring constantly until it boils. Then reduce to a simmer. Simmer for a few minutes and then remove from heat. Add cheese and whisk until it is all melted. Do not place back on heat again. Pour cheese sauce over beef.
4. Layer the next five ingredients in your casserole dish: lettuce, tomato, red onion, fresh cilantro, and black olives.
5. For the guacamole, add the next ingredients to a large bowl: avocados, the juice of 1 lime, 1 clove chopped garlic, and freshly chopped cilantro. Mash with a fork until well combined. Spoon guacamole over dip. Finish by adding sour cream on top. Serve with tortilla chips and enjoy!
